Seaweed and Beancurd Sheet Shrimp Roll

Rumput Laut dan Kembang tahu gulung

材料

  1. 蝦仁 180g
  2. 腐皮 1塊
  3. 壽司紫菜 2塊

調味料

醃料

醃蝦膠料:

  1. 生粉 1湯匙
  2. 白胡椒粉 1/4茶匙
  3. 糖 1茶匙
  4. 蛋白 2湯匙
  5. 麻油 1/2茶匙
  6. 鹽 1/2茶匙

做法

  1. 將蝦仁用廚房紙索乾水份,用刀邊拍扁,再用刀背剁碎
  2. 放入醃蝦膠調味料拌勻,再用筷子將蝦肉不停打圈起膠，將蝦膠撻到起膠約5次
  3. 包保鮮紙放入雪櫃雪凍,約 1小時
  4. 將腐皮剪成與紫菜同一大小
  5. 將一半蝦膠用湯匙平均搽上腐皮上
  6. 再放上2塊紫菜搽上另一半蝦膠
  7. 將腐皮卷上
  8. 將白蘿蔔切片，鋪在鍋內，放上蝦卷無水蒸5分鐘
  9. 放涼後切片備用
  10. 冷鍋落油中火燒熱，直至冒出微煙轉小火，放入蝦卷煎至金黃即可。

Seasoning

Marinade

  1. Potato Starch 1tbsp
  2. White pepper 1/4tsp
  3. Sugar 1tsp
  4. Egg white 2tbsp
  5. Sesame oil 1/2tsp
  6. Salt 1/2tsp

Cooking Method

  1. Pat dry the shrimp with kitchen towel. Smash it with the side of knife, and chop it with knife’s spine
  2. Mix the seasonings with shrimp paste, stir well, Slap the minced shrimp for about 5 times
  3. Storage in fridge for 1hour
  4. Clean and Cut the beancurd sheet into the same size as seaweed.
  5. Spread half of the shrimp paste on beancurd sheet
  6. put 2pcs of seaweed on, and spread the other half of shrimp paste on it.
  7. Roll it up.
  8. Sliced the radish, put in the pot, cook for 5mins.
  9. Sliced it into 1inch, set aside.
  10. Heat the oil in pan in med-heat, turn to low-heat when oil start smoking. Pan-fried the shrimp roll until both side golden brown. Serve.

Bahan

  1. Udang 180g
  2. Lembar Tahu 1 pcs
  3. Sushi Seaweed 2pcs

Bumbu Perendam

Mengasinkan

  1. Pati Kentang 1tbsp
  2. Lada putih 1 / 4tsp
  3. Gula 1tsp
  4. Putih telur 2tbsp
  5. Minyak wijen 1 / 2tsp
  6. Garam 1 / 2tsp

Metode memasak

  1. Keringkan udang dengan handuk dapur. Hancurkan dengan sisi pisau, dan potong dengan tulang pisau
  2. Campur bumbu dengan terasi, aduk rata, tepuk udang cincang sebanyak 5 kali
  3. Penyimpanan dalam lemari es selama 1 jam
  4. Bersihkan dan Potong lembaran kembang tahu dengan ukuran yang sama seperti rumput laut.
  5. Sebarkan setengah dari pasta udang pada lembar kembang tahu
  6. Letakkan 2 lembar rumput laut, dan sebarkan setengah bagian terasi di atasnya.
  7. Gulung.
  8. Irisan lobak, masukkan ke dalam panci, masak selama 5 menit.
  9. Iris menjadi 1 inci, sisihkan.
  10. Panaskan minyak dalam wajan dengan api kecil, nyalakan api kecil saat minyak mulai berasap. Goreng gulungan udang sampai kedua sisinya berwarna cokelat keemasan. Dan kemudian siap di hidangkan .
