Deep-fried Beef Fillet with Tamarinds Sauce
Fillet Daging Sapi Goreng Saus Asam Jawa
材料
- 牛肉 500g
- 雞湯100ml
- 水 100ml
- 紅辣椒2隻
- 蒜頭4瓣
- 紅蔥頭2顆
調味料
- 羅望子肉3湯匙
- 冰糖1塊
- 羅望子醬 1湯匙
- 生粉水 1湯匙
醃料
做法
- 將牛肉切條,將生粉包裹牛肉條
- 燒熱油,放入牛肉炸至金黃色
- 另一小鍋落油燒熱,炒香蒜頭、蔥頭及辣椒
- 加入雞湯、羅望子醬、冰糖及羅望子肉,煮滾後打芡
- 放回牛肉拌勻即可

- water 100ml
- Chili 2pcs
- Garlic 4 cloves
- Shallot 2 cloves
Seasoning
- rock sugar 1pcs
- Tamarinds Paste 3 tablespoon
- Tamarinds Puree 1tbsp
- Potato Starch Mixture 1tbsp Cooking
Marinade
Cooking Method
- Cut the beef int stripes, coat with potato starch.
- Deep-fried the beef stripes until golden brown
- Sautéed the garlic, shallot, chili in other pan
- add in chicken stock, tamarinds paste, rock sugar and tamarinds puree, bring it to boil. Thicken the sauce with potato starch mixture.
- Add in the beef, stir well. Serve.
Bahan
1. Daging Sapi 500g
2. Kaldu ayam 100ml
3. air 100ml
4. Cabai 2 pcs
5. Bawang putih 4 siung
6. Bawang merah 2 siung
Bumbu Perendam
1. gula batu 1 pcs
2. Pasta Asam Jawa 3 sendok makan
3. Haluskan Asam Jawa 1 sdm
4. Campuran Tepung Kentang 1 sdm Memasak
Mengasinkan
Metode memasak
1. Potong-potong daging sapi, lumuri dengan tepung kentang.
2. Goreng potongan daging sapi sampai berwarna cokelat keemasan
3. Tumis bawang putih, bawang merah, cabai di wajan lain
4. masukkan kaldu ayam, pasta asam, gula batu dan asam jawa, didihkan, kentalkan saus dengan campuran tepung kentang.
5. Masukkan daging sapi, aduk rata. dan siap di Sajikan.
