Braised Chicken with Bitter Melon
Ayam rebus dengan pare
材料
- 涼瓜8両
- 雞肉4両
- 姜米一湯匙
- 蒜米一湯匙
- 豆豉一湯匙
調味料
- 蠔油1湯匙
- 老抽1茶匙
- 生抽1茶匙
- 麻油1茶匙
- 糖1茶匙
醃料
做法
- 涼瓜洗淨去籽切角形
- 雞肉切件,落少許生粉及鹽醃15分鐘。
- 慢火落油調至中火,先將雞件炒熟撈起備用。
- 慢火落油調至中火,落爆香薑、蒜及豆豉,加入涼瓜,並一邊炒一邊灑水,加入所有調味料炒到涼瓜淋身。
- 最後加入雞片炒勻。完成。

- Chopped Ginger 1 tbsp
- Chopped Garlic 1 tbsp
- Cardamom 1 tbsp
Seasoning
- Oyster Sauce 1 tbsp
- Dark Soy Sauce 1 tsp
- Soy Sauce 1 tsp
- Sesame Oil 1 tsp
- Sugar 1 tsp
Marinade
Cooking Method
- Wash and remove seed from the bitter melon
- Cut the chicken meat, marinate with little potato flour and salt for 15mins.
- Heat the oil in wok, sautéed the chicken meat
- Heat the oil in wok, sautéed the ginger, garlic and cardamom, add in the bitter melon and water together, then add all seasonings, simmer until soften.
- Add in the chicken and stir-fry. Serve.

- Saus Tiram 1 sdm
- Saus Kedelai Gelap 1 sdt
- Kecap 1 sdt
- Minyak Wijen 1 sdt
- Gula 1 sdt
Mengasinkan
Metode memasak
- Cuci dan buang biji pare
- Potong-potong daging ayam, marinasi dengan sedikit tepung kentang dan garam selama 15 menit.
- Panaskan minyak di wajan, tumis daging ayam
- Panaskan minyak dalam wajan, tumis jahe, bawang putih dan kapulaga, masukkan pare dan air bersama-sama, lalu masukkan semua bumbu, masak hingga layu.
- Masukkan ayam dan tumis. Menyajikan.
